Recipe of the week. Chicken Soup.
Chicken Soup for the soul. A quick & easy work from home lunch.
Ingredients
300g of shredded rotisserie chicken
1 Onion
3 Carrots
2 Sticks of celery
1.4l chicken stock
Salt & pepper
1 cup of frozen peas
Method
Chop the onion, carrots & celery and add to a pan with some olive oil
When the vegetables are soft add the chicken stock
Leave to simmer for 15 minutes
Add the shredded chicken for a further 5 minutes
Remove half of the mixture and blend the other half until smooth
Add back the other half with the cup of frozen peas and cook for 5 minutes
Serve with crusty bread
