Recipe of the week. Chicken Soup.

 

Chicken Soup for the soul. A quick & easy work from home lunch.

Ingredients

  • 300g of shredded rotisserie chicken

  • 1 Onion

  • 3 Carrots

  • 2 Sticks of celery

  • 1.4l chicken stock

  • Salt & pepper

  • 1 cup of frozen peas

Method

  • Chop the onion, carrots & celery and add to a pan with some olive oil

  • When the vegetables are soft add the chicken stock

  • Leave to simmer for 15 minutes

  • Add the shredded chicken for a further 5 minutes

  • Remove half of the mixture and blend the other half until smooth

  • Add back the other half with the cup of frozen peas and cook for 5 minutes

  • Serve with crusty bread
