Recipe of the week. Arrabiata Pasta with prawns.

 

We are loving this gorgeous spicy Arrabiata Pasta with prawns. Sometimes prawns can be considered a real summer staple but this recipe includes them perfectly into a cosy Winter dinner.

Ingrediants

  • 200g fresh prawns

  • 100g fresh pasta

  • 1 punnet of cherry tomatoes

For the sauce:

  • 2 cans of chopped tomatoes

  • 2 tablespoons of olive oil

  • 1 teaspoon of crushed chilli flakes

  • 4 cloves of garlic, minced

  • 1/3 cup of chopped fresh basil

Method

For the sauce:

  • Combine all ingredients in a large saucepan & simmer for 30-40 minutes

  • Roast the cherry tomatoes in the oven for 10-15 minutes & set aside

  • In a pan, add fresh chilli, garlic (and other veggies if you like)

  • Add the prawns for 4-6 minutes

  • Cook the pasta

  • Mix everything together & enjoy!

Tip:

Make double the sauce recipe & use it for homemade pizzas the next day. It’s the perfect sauce base & low in calories.

Or, pour over some cooked chicken & bake in the oven with cheese…yum!
